Double Chocolate M&M "Kikis"

It's been super rainy here lately.
It seems that whenever it rains I want to bake.
It's a good and bad thing
Sweets in the house
can be very dangerous!

However, these cookies are
They are chocolate-y and full of goodness.

Before I start you're probably wondering why I call them "Kikis"
That's all Oliver. He loves cookies - but whenever he asks for one
it comes out as Kiki.

So these my friends are Double Chocolate M&M Kikis

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 ounces semisweet or milk chocolate, coarsely chopped (I used chocolate chips)
1/2 cup (1 stick) butter, cut into eight pieces
3/4 cup M&M’s
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla

Preheat oven to 325 degrees. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. set aside.

In a microwave-safe bowl, place the chopped chocolate (or chocolate chips) and the butter.

Microwave at 30 second intervals until the chocolate and butter have melted. Stir in between. Mine took one minute to completely melt.
Once melted. Set aside.
In a large bowl combine the chocolate mixture, sugar, eggs, and vanilla. Mix on medium speed until combined.

 Gradually mix in flour mixture on low speed.

Stir in the M&Ms with a spatula or spoon.
Line baking sheets with parchment paper,  Drop dough onto baking sheets spacing them about 1 1/2 inches apart.

Bake the cookies about 13-14 minutes. The cookies will still be soft. Let them sit for 2-3 minutes on the baking sheet before removing them to a wire rack or parchment paper.

Once cool package them up and send them to work with your husband. Or take some to the neighbors. Hide them in the back of the freezer. They are so good you will want to eat them all.

My Biggest Fear

What's your biggest fear? Its a simple questions. Some may say spiders, or snakes or heights.

I say failure.

Mostly Momma Failure.

Oliver is at the age where he wants to be independent. I let him spread his wings and try new things, but in the back of my head I am always wondering "is that enough?"
My mind starts to race, I get hot and sweaty and my face gets red when I think about all the things I am doing and worrying if they are the right things.

Is he eating enough?
Does he get enough sleep?
Are we reading enough books?
Should he be around more kids his own age?
TV? Should he watch TV?
Is he growing on track?

All these questions float around in my head and I wonder and I worry and I lose sleep over it.

I just don't want to screw him up.

I read books.
I talked to other Mommas.
Heck I took care of other peoples children for years --
yet when it comes to my own, sometimes I feel so incredibly lost.

Unstuffed Peppers


1/2 lb of ground beef (chicken or turkey)
1 jar of spaghetti sauce - any kind
1 cup minute rice
2 bell peppers coarsely chopped
1/4 cup of water
Onion (optional)

Brown meat and onion in skillet.
Once meat is mostly cooked add remaining ingredients. Cover.
Simmer on low for 20 minutes or until rice is cooked and peppers are tender.

I feel like I'm moving in 50 different directions lately.
There are so many things I want to finish and accomplish before the Little Man gets here.

Nesting hit me early, I had a lot of energy and was feeling pretty creative.
Ryan helped a lot with cleaning the house and purging things that we really don't need...and by purging I mean storing in bins in the basement.
I'm a hoarder ya know - I can't actually get rid of something. I may "need" it someday.

But yet, when you look at my house -
or when I look at this house I think of all the things yet to do.
Things that aren't even that important.

I need to slow down
I know this.

So lately I've been dedicating my time to Oliver.
His little life is going to change too. In ways he won't understand.
And that makes me sad. And a little guilty.
So I've been spending as much time with him as possible.
I know having a little brother will be wonderful for him.
We are giving him something I never had growing up.
It was lonely being an only child.
I know this is a good thing.

I'm Gonna Miss This

I am a worrier.

I worry about everything
some may call me uptight
I am not the risk taker
I am perfectly content with both feet on the ground
you won't find me jumping from a plane.

Ryan is the complete opposite
(opposites attract...right?)
Oliver takes after Ryan
and since I had Oliver
I've been trying to remind myself
Don't sweat the small stuff.

It's okay if he wants to go down the slide alone.

He will be alright if he is up past his bedtime
Eats macaroni and cheese for the billionth time in a week
Wrestles with the big kids
Drinks juice
and sometimes has McDonalds
Wants to try the stairs by himself
 I'm starting to realize these moments wont last forever
I will wake up and it will be over
I'm going to miss this
I want to cherish it
all of it
He is little for only a short time
Soon he will grow up
and I will have
different worries
more worries
bigger worries
so for now
I breathe deep
when he wants to sit on the coffee table
and soak it up

The Colors of Fall

It is beautiful here this time of year.
There is something so relaxing about autumn in Buffalo.
Once the trees start to change, I feel peaceful.
The days may get shorter but they aren't filled with so many things to do
like they are in the summer months.

People seem to slow down. 

Every year we make the 45 minute (if we're lucky) drive down to Ellicottville for their annual Fall Festival. Its a beautiful little town, and if I were a skier or snowboarder (or even liked the snow) I'd probably live there.
This year we left early. Being suck in traffic is one thing. Being stuck in traffic with a toddler is a completely different ball game. There was no way we were going to find out how that went.
We got lucky we only had to wait in traffic about 15 minutes. We got really, really lucky! 

Still Happy!

Oliver was awesome the entire time.
He loves being outside.
He loves being wheeled around in his stroller.
He loves people watching. 
Something he gets from Ryan and I. 

As we leisurely walked around looking at the crafts
I couldn't help but wish that I had a tent there.
That I was selling a part of me there.
I know its something that I want to pursue.
I'm just not sure when.
All I know is, I felt inspired.
Something about being around artistic and creative people
felt comfortable to me.
It feels like home.

Olivers Day with Yo Gabba Gabba and another Feature

Months ago we found out Yo Gabba Gabba was coming to town.
Ryan and I decided that for an early Christmas gift we would get tickets and take Oliver. He loves Yo Gabba Gabba.

I let my kid watch TV. He's not in front of it all day, but its on most of the day. Mainly for background noise and I admit sometimes it makes my day a little easier. Especially when this show comes on.
Muno is his favorite.

He's been pretty much obsessed  in love with this show since he was 8 months old.
The theme to his 1st birthday party was Yo Gabba Gabba. I made a shirt for him and the decorations. I have to admit, I'm kinda obsessed in love with the show too.

So we knew he would have the time of his life at Yo Gabba Gabba Live.
We started our family fun day going out to lunch at one of our favorite places Ted's Hot dogs. Its a great little hot dog/hamburger place. We had a late lunch and then made our way to the show.

Oliver was a little unsure once it began. There were parents kids dancing and singing. The lights were going crazy and there was confetti. Lots and Lots of Confetti.

Once he realized what was happening he seemed to really enjoy it.
So much so, he cried when it was over.

I'm so happy we did this.
Lately everything seems so rushed.
We are down to the last few weeks before our new arrival comes.
We have been running around trying to finish things.
Time seems to be flying by.
It was nice to take a few hours and just be a family of three.
Its days like these that make being a mom so worth it. To see the happiness on my sons face was something so incredible. To know that I could give him that and even though he is young and won't remember that day
Ryan and I will.
And that is special.

Banana "Ice Cream"

This "Ice Cream" is Bananas



You need to try this. This is the best thing since, well...... real ice cream.

I had some bananas on the counter they were looking pretty sad. Then I remembered a recipe I found on pinterest awhile back and thought I'd try it out.

Forgive me. These are the only pictures I took. I kind of suck at this whole blogging thing. I always forget to take pictures while I'm actually making something - then remember once I'm done.

Spiderman {Hearts} Playdough

I had a brilliant idea the other day
and that was to make some playdough for Oliver.

He's never seen it before I thought for sure he would love it.
And was I right.

I used a super simple recipe that my grandma use to make for me
All you need is
2 cups of plain flour
2 cups of colored water
1 Tbsp. of cooking oil
1 tsp. cream of tartar
1 cup of salt
 Place all of the ingredients in a medium pot and cook on medium heat. Stir it until it starts to get thick. Remove it from the pot and let it cool.
Then PLAY!!

Spiderman loved it.

**Store the dough in an airtight container in the refrigerator for future use.
Happy Tuesday - we are taking Oliver to see Yo Gabba Gabba today - I might be more excited than him!!
