Strawberry Cupcakes with Lemon Frosting

These cupcakes {cuppiecakies as Oliver calls them!} are delicious. Seriously they taste like summer.


Box cake mix {yellow or white}
 3 eggs
1 Cups water
 1/3 Cup oil
2 Cups strawberries, chopped
{if you chop them small they will float in the batter, the bigger the chunks they will sink}
Colored sugar {optional}
Yellow Food coloring {optional}

{this frosting is sweet, literally!}
2 Cups powder sugar
1/4 Cup butter, softened
1 Tbsp lemon juice
{this makes enough frosting to lightly dab 24 cupcakes, if you plan on actually frosting the cupcakes you may want to double this recipe.}


1. Preheat oven to 350 degrees.

2. Mix cake mix according to directions  

4. Blend in the strawberries 

5. Fill cupcake pan and bake at 350 degrees for 18-21 minutes

6. Remove from oven and pan and let cool.

Let's make the frosting! 

7. Blend butter and power sugar together

8. Add the lemon juice mix until completely blended. 
If you wish you can add yellow food coloring. 
The gel kind is the best, but if you have the liquid kind that is fine. Just know that the more liquid you add to the frosting it will change the consistency of it. 
If it becomes to thin just add a little more powder sugar. 

9. Lightly frost with a dollop of frosting. Top with fresh strawberries and colored sugar.
